Beetroot Salad Recipe

I don’t often crave SALAD, but when I do its one like this! It’s full of texture and flavor and easy to make. It is a mixture of pasta, beetroot, spinach, dill and super easy dressing.  This is a show-stopping and tasty salad for a wonderful meal. it’s a meal in bowl version of my healthy beetroot salad recipe that helps me having a much-needed balance diet.

I have prepared one of the best combinations for a salad! You must have heard beetroot with veggies but I made a small change with beetroot I added pasta and dill leaves. For all the pasta lovers! You get the delicious pasta salad with a healthy touch. Isn’t this combination AMAZING? Also beetroot as a vegetable rarely receives any appreciation. Beets are packed with essentials nutrients, they also have medicinal properties. These are delicious and easy to add to your diet. INGREDIENTS FOR BEETROOT SALAD RECIPE

  1. 150gm Pasta
  2. 1 Tablespoon Lemon Juice
  3. 1 Tablespoon Olive Oil
  4. ¼th Teaspoon Dijon Mustard
  5. 15gms Fresh Dill Leaves
  6. 50gms Fresh Spinach
  7. 1 Medium Beetroot
  8. 70gms Salad Cheese or Feta Cheese
  9. 20gms Cashews or Hazelnut

BEETROOT SALAD RECIPE – PREPARATION METHOD

  1. Firstly, boil the pasta and then drain it in a bowl.
  2. Secondly, finely chopped dill leaves and spinach.
  3. Then, take a bowl and add lemon juice, olive oil and Dijon mustard and whisk it properly until its combined. Add dill leaves to the mixture and mix it and set aside.
  4. Thirdly, toss the pasta with the dressing along with spinach and beetroot and set aside for 10 minutes so the pasta absorbs the dressing.
  5. Finally, add salad cheese and cashews on the top.
  6. Serve warm or at room temperature.

COOKING TIME- 10 minutes

PREPARATION TIME- 15 minutes

TOTAL TIME- 25 minutes
