Chicken Biryani Recipe

Chicken biryani is super yummy and tasty. This is a classic Hyderabadi chicken biryani recipe. I have created this recipe on my own two years ago when I was exploring Indian Cuisine. Once I went to the supermarket and saw this kevra water and thought about what it is used for. I searched online about it and founded that this water is mostly used in Hyderabadi cuisine. So, thought why not try this water in chicken biryani and trust me it gives a great aroma to the biryani. This recipe is little time taking but just tastes amazing as it’s full of spices and kevra water. This made with delicious colorful rice and spicy marinated chicken. These chicken biryani recipe just tastes similar to restaurant style chicken biryani. Try out this delicious biryani recipe and let me know in the comments. 


For Rice

  1. 1kg Rice
  2. 2 Cloves
  3. 1 Mace
  4. 1 Black Cardamom
  5. 2 Green Cardamom
  6. 1 Bay leaf
  7. 1 inch Cinnamon Stick

For Chicken Marination

  1. 1kg Chicken
  2. 2 Tablespoon Ginger Garlic Paste
  3. 400gms Yogurt
  4. 2 ½ Tablespoon Chili Powder
  5. 2 Tablespoon Garam Masala Powder
  6. 1 Tablespoon Turmeric
  7. 2 Tomatoes (Chopped)
  8. 2 Lemon Juice
  9. 1 Mace
  10. 2 Cloves
  11. 1 Black Cardamom
  12. 2 Green Cardamom
  13. 1 Bay leaf
  14. 1 inch Cinnamon Stick

For Garnish

  1. 20gms Mint
  2. 20gms Coriander
  3. 100gms Fried Onion
  4. 4 Boiled eggs
  5. 20gms Cashew Nuts
  6. 20gms Raisins
  7. Kevra Water (As Needed)


For the Rice

  1. Firstly, wash and drain the rice. Put in boiling water with all the above whole spices. Then, cook until done but making sure grain is not broken.
  2. Then, drain the rice in a colander. Then, color half of the rice with a red-orange color.

For Chicken Marination

  1. Firstly, marinate the chicken with yogurt, salt, ginger-garlic paste, turmeric, chili powder, garam masala powder and lemon juice (overnight preferably).
  2. Secondly, heat the pan with some oil; crackle all the above whole spices. Then, add marinated chicken and stir on medium flame. After 2-3 minutes add tomatoes and mix it well until its mashed like puree and then add a little amount of water and let it simmer for 10 minutes or until done. Adjust seasoning.

For Assembling & Garnish

  1. Firstly, apply ghee in the handi,  add a layer of rice followed by fried onion, cashew nuts, raisins, coriander, mint chopped, and sprinkle kevra water. 
  2. Secondly, add chicken gravy and pieces, repeat the same procedure twice.
  3. Finally, seal the handi with the dough and finish in the oven or on hot coals for at least 20-25 minutes. Break the seal of the dough. Serve hot.
