Ciabatta Recipe

Ciabatta Recipe is a traditional Italian bread recipe, the word ciabatta means “SLIPPER” which refers to a slipper-shaped rustic bread made from very wet dough with a large amount of polish or either biga. Some people also refer this bread as biga bread. It requires flour, yeast, olive, and water. For the dough we put refined flour and salt. It is a much lighter, chewy interior and slightly crunchy crust.

I made this bread in portions today to enjoy with my family for lunch. This is the first time I have tried making this bread and I think it turned out good. Though I love dipping it in olive oil. This ciabatta recipe is not difficult to prepare, it’s just you require little planning before you think of preparing this. You can make them in the morning and they will be ready in the afternoon, but I suggest you to make your polish the night before. For the sponge

  1. 200gms Bread Flour
  2. 10gms Yeast
  3. 80ml Olive Oil
  4. 200ml Water

For the dough

  1. 50gms Refined Flour
  2. 5gms Salt


  1. Firstly, make a sponge and cover it with wet cloth to rest for one hour.
  2. Secondly, mix the flour along with salt and spread on the table top. Then, remove the sponge and incorporate the flour and salt mixture into the sponge by folding it in 3 folds, 3-4 times.
  3. Thirdly, flatten it and cut the dough into 10 portions or 1 long loaf.
  4. Then place it on a lightly dusted tray. Dust the bread with flour. Proof it for 40 minutes.
  5. Finally, bake at 230 degrees centigrade for 10-12 minutes or 25-30 minutes for a loaf.


BAKING TIME- 12 minutes

Did you know Salmon Cucumber canape is just heaven. Cucumber is best for summer. So I decided to make something different with cucumber which is healthy and tasty. It works as a great base for canape, especially people who are health conscious thinking to eat fewer calories. CANAPE is a French word that means SOFA since it works as a resting place for spreads. These are easy summer appetizer and super refreshing. This recipe couldn’t be more versatile. The ideas for healthy toppings are endless. I have used hummus as spread and salmon on the top. So how did I decide to prepare this cucumber salmon bites? I had leftover hummus so I decided why not make something innovate with it which is quick, healthy, delicious as well as beautiful.

My brother is a big fan of cucumber so taking cucumber as a base and salmon as a topping. Salmon is high in proteins, so the dish is a complete health pack. I don’t know about you all but I am a huge fan of anything which looks fancy and amazing. You can always choose your spread, it can be avocado spread, cream cheese, mayonnaise. Also if you want you to change the topping by adding almonds and raisins. You can make this as vegan canape by eliminating salmon and topping it with herbs like parsley and mint. So people try out these cucumber canapes this summer and enjoy it with your lovely family. 


  1. 1 Lebanese Cucumber (sliced)
  2. ½ Cup Hummus
  3. ½ Teaspoon Lemon Juice
  4. 6 oz Smoke Salmon
  5. Dill leaves for Garnish


  1. Firstly, slice the cucumber approximately ¼ inch thick. Then mix lemon juice with hummus.
  2. Secondly, pipe the hummus mixture on the cucumber. Then, top up the canapé with thin slices of salmon.
  3. Finally, garnish it with dill leaves.

Every time is Burger time! This corn and chickpea burger recipe is healthy, easy, and quick to prepare. Everyone eats simple and common burgers like a veggie burger, chicken burger, and meat burger, and so on. So I thought why not try out a vegan chickpea burger. This burger has chickpea and corn patties and it is flavored with some spices. This burger is really easy to prepare, it just takes 15-20 minutes to prepare. So, One day I was getting late for my university and I forgot to order vegetables, I had just common ingredients in my kitchen so I made this easy burger.

Who doesn’t like a burger and who isn’t craving for it? And in the current situation we can’t even order from outside so why not try this recipe and enjoy outside food at home- at least food doesn’t have practical social distancing. This burger is included chickpeas, sweet corn, potato, some spices, tomatoes, and lettuce. You must be thinking chickpea….. How would it taste but trust me I have tried this and it tastes very similar to a veggie burger? So try out this easy and delicious spicy corn and chickpea burger recipe and let me know.


  1. 400gm Chickpeas
  2. 3 Medium Boiled Potato (optional)
  3. 100gms Peas
  4. 340gm Sweet Corn
  5. ½ Bunch Fresh Coriander
  6. ½ Teaspoon Paprika
  7. 4 Green chilies (chopped)
  8. ½ Teaspoon Coriander Powder
  9. ½ Teaspoon Cumin Powder
  10. Salt to taste
  11. 2 Tablespoon Bread Crumbs
  12. 1 Tablespoon Corn Flour
  13. 1 Small Round Lettuce
  14. 2 Large Tomatoes
  15. Tomato Ketchup
  16. Burger Bun


  1. Firstly, drain the chickpeas and sweet corn in a strainer.  Then, add coriander, chickpea, and sweet corn to the food processor and blend it until it’s smooth.
  2. Then, add boiled potato, peas, green chili, paprika, cumin powder, coriander powder, salt, cornflour, and bread crumbs along with chickpea mixture and mix it properly. Make sure the mixture is not too smooth- as you want to retain some texture.
  3. Secondly, take some oil in your palms and take the mixture and shape it in a patty shape.
  4. Thirdly, heat the pan with some oil over medium heat and cook the patties for 10 minutes or until its golden brown.
  5. Meanwhile, clean the lettuce and slice the tomatoes.
  6. Finally, put some ketchup on the bun add lettuce and tomatoes and put one patties, and then you are ready to eat the delicious burger.

So for posting today’s recipe, a special thanks to my small sister who was craving for pancakes, and this also gave me a reason to post this wonderful and tempting pancakes. I have swirled these pancakes with honey to give my sister a healthy breakfast but you can choose chocolate syrup or maple syrup.   1. 1+ ½ Cup All-purpose Flour
  2. 4 Teaspoon Baking Powder
  3. A pinch of Salt
  4. 2 Tablespoon Sugar
  5. 1 Egg
  6. 1+ ¼th Cups Milk
  7. ¼th Cup Melted Butter (Require more for cooking)
  8. 1 Teaspoon Vanilla Essence


  1. Firstly, in a large bowl add altogether the all-purpose flour, baking powder, and sugar and mix it well.
  2. Secondly, take another bowl add egg, milk, melted butter, sugar, and vanilla essence and mix it with a fork.
  3. Thirdly, add the wet ingredient to dry ingredients and mix it with a spoon until its thick and smooth batter.
  4. Take a pan, put some butter and with the help of a ladle, pour the batter in the pan and let it cook on a slow flame, make sure when one side of the pancake is brown then, flip it. Repeat the same steps for the remaining batter.
  5. Finally, stack the pancakes in a plate and serve with maple syrup or honey and berries.

For Bechamel Sauce

  1. 600ml Milk
  2. 60gms Flour
  3. 60gms Butter
  4. ½ Onion
  5. 1 Bay Leaf
  6. 2 Cloves


  1. Firstly, slice mushroom and diced onions. Then, heat some butter in a pan, sauté onions, and mushroom. Don’t let them brown.
  2. Secondly add some thyme. Then cool and blend the mushroom mixture with some béchamel sauce to a fine puree and add white pepper and nutmeg powder and strain if required.
  3. Finally, adjust the consistency of the soup along with the seasoning. Serve hot with a swirl of cream and parsley.

For Bechamel Sauce

  1. Firstly, infuse the milk by simmering with the studded onion for 15-20 minutes. Cool slightly. Melt the butter and refined flour and make a white roux.
  2. Secondly, add infused milk gradually to the roux beating constantly. Then, bring the sauce to a boil, stirring constantly. Reduce heat to simmer and allow it to cook for some time.
  3. Thirdly, adjust the consistency with more hot milk, if necessary.
  4. Finally, season very lightly with salt and then strain the sauce, cover or spread melted butter on surface to prevent skin formation.

NOTE– One can use heavy cream also instead of béchamel sauce. I used my leftover béchamel sauce.

Then, I promised to myself that this crepe will be best crepe ever a person can have and you know what….? It came out to be absolutely delicious with the delicious filling of spinach and mushroom. Crepes are mostly loved by youngsters and kids, also there are different types of crepes. But looking at the healthier side I prefer these stuffed crepes.

A mushroom, spinach, garlic, onion, and YES last but not the least Butter, this filling is just magical. While preparing the flavors of this spinach and mushroom crepes recipe, the kind of flavors that completely smack the spot you didn’t know you wanted to. Our crepes are perfect for lunch. For the Crepes

  1. 100gms All-Purpose Flour

For the filling

  1. 10gms Butter
  2. 1 Onion (Chopped)
  3. 2 Cloves Garlic (Chopped)
  4. 100gms Button Mushroom (Sliced)
  5. 100gms Spinach (Chopped & Blanched)
  6. Salt to taste
  7. Pepper to taste

For the Sauce

  1. 100ml Milk
  2. 5gms Butter
  3. 5gms Flour
  4. A pinch of Nutmeg
  5. Salt to taste
  6. Pepper to taste
  7. 20gms Parmesan Cheese


For the Crepes

  1. Firstly, mix the flour, sugar, and salt together, Then add egg and milk and mix it until smooth.
  2. Then whisk in oil forming a smooth pourable batter. Rest the batter before making the crepes.
  3. Secondly, heat a non-stick pan with little oil/butter. Pour a ladle of batter in a pan and swirl as to coat the bottom of the pan. Cook until lightly golden and flip for a few seconds on the other side. Slide the crepe on the plate.

For the Mixture

  1. Thirdly, sauté onion and garlic in butter, then add mushroom and sauté.
  2. Then, sauté for a minute and then add blanched spinach, salt, pepper, and toss it.

For the Mornay Sauce

  1. Prepare a béchamel sauce and add parmesan cheese and mix it until its melted.

Assembling the Crepes

  1. Finally, fill the crepes with the spinach, mushroom mixture, fold, and place on the plate. Cover with Mornay Sauce and serve hot.

Brioche À Tête

Brioche a tete are baked into a round tin with a ball of dough on the top. A light tender, classic French bread enriched with eggs and butter, traditionally baked in a brioche mold with a large ball of dough and a smaller on top.   1. 250gms Bread Flour
  2. 15gms Yeast
  3. 30gms Sugar
  4. 30-40ml Milk
  5. 2 Eggs
  6. 5gms Salt
  7. 50gms Butter


  1. Firstly, sieve the flour. Make a well, add the yeast, sugar and knead the dough using milk. Cream the butter and salt and knead the dough further.
  2. Secondly, keep the dough for fermentation until double in size. Knock back and divide into 12 portions. Round and bench it for 15 minutes and shape it into Brioche À Tête and place in a tartlet mould or patty tins.
  3. Thirdly, proof until double in size, egg wash and bake at 200 degree centigrade for 10-15 minutes or until golden in colour.
  4. Finally, brush with melted fat when out of the oven.

NOTE- For chocolate brioche, stuff the chocolate chips in brioche, proof and bake as above. For cinnamon brioche, when the brioche is out of the oven, roll the brioche in cinnamon sugar.

  1. 3 Cups All-Purpose Flour
  2. 1 Tablespoon Baking Powder
  3. 1 Teaspoon Sea Salt

  5. 355ml Beer
  6. Butter for brushing the tin


  1. Firstly, take a bowl and sieve flour, salt and baking powder.
  2. Secondly, add honey to the dry ingredients and mix them well.
  3. Thirdly, add the beer to dry mixture simultaneously and mix it well.
  4. Brush the tin with butter and preheat the oven at 150 degrees centigrade.
  5. Finally put it in the oven for 45 minutes at 150 degrees centigrade.

NOTE- Most of the people use self-rising flour but in case if you don’t find self-rising flour, can use above mention recipe, but if you want to use self-rising flour do not put baking powder because self-rising flour is a mixture of all-purpose flour and baking powder.

For the Dough

  1. 300gms strong bread flour or All-purpose Flour
  2. 1 teaspoon instant yeast
  3. 1 teaspoon salt
  4. 200ml Warm Water
  5. 1 tablespoon Olive oil, and extra oil for drizzling

For the Pizza Sauce

  1. 3 Tablespoon Olive Oil
  2. 2 Medium Onion (Chopped)
  3. 6 Tomato (Chopped)
  4. 4 Cloves Ginger (Chopped)
  5. 1 inch Ginger (Chopped)
  6. 4 Green Chili (Chopped)
  7. 2 Teaspoon Sugar
  8. Salt to taste
  9. 2 Tablespoon Tomato Ketchup
  10. 2 Teaspoon Chili Powder
  11. 1 Tablespoon Soy Sauce
  12. 1 Tablespoon Oregano

For Topping

  1. 1 Bell Pepper (Red, Green, Yellow) (Chopped)
  2. 10-12 Olives (Sliced)
  3. 1/2 Cup Sweet Corn
  4. 1 Cup Mushroom (Sliced)
  5. 1 Cup Broccoli (Chopped)
  6. Mozzarella Cheese
  7. Oregano
  8. Chili Flakes
  9. Butter for brushing the base


For the Dough

  1. Firstly, take flour make a well, add yeast, salt and mix it with flour then mix oil and water and knead the dough until it’s soft.
  2. Cover the dough with a damp cloth and keep it aside to rise.

For the Pizza Sauce

  1. Secondly, add olive oil to the hot pan then add onion and let it brown for a minute or two.
  2. Then add ginger, garlic and sauté it after few seconds add tomato mix it well until its getting dry, then add chili powder, salt, sugar, soy sauce and ketchup. Mix it well and let it cook for 15 minutes or until its thick.

For Assembling

  1. Thirdly, knead the dough and make a split in balls. On a floured surface roll, roll out the dough into large rounds, about 25cm across with rolling pin.
  2. The dough should be very thin as it will rise quickly.
  3. Last but not the least, put the rolled dough on a pizza tray and brush the base with butter, add pizza sauce, add all vegetables and then top it up with mozzarella cheese, chili flakes and oregano.
  4. Finally bake the pizza 220-degree centigrade for 8-10 Minutes.

Egg Fried Rice Recipe

This Indo-Chinese Egg Fried Rice Recipe is a complete meal because it’s got protein, veggies built in!  All you really need are vegetables, eggs, rice, soya sauce and chili sauce.   1. 4 cups Cooked Basmati Rice
  2. 3 Tablespoon Olive Oil
  3. 5  eggs
  4. 1 Finely chopped Onion
  5. ½  Bell pepper (Red, Green, Yellow) (chopped)
  6. 4 Cloves garlic (chopped)
  7. 1 Carrot (chopped)
  8. ½ cup Corn
  9. 3 Tablespoon Soya Sauce
  10. 1 Tablespoon Chili Sauce
  11. Salt to taste
  12. Scallions for Garnish
  13. 1 Boiled egg


  1. Firstly, take 4 eggs and beat them properly and one left the egg in a separate bowl. Take a pan and add one tablespoon of olive oil and scramble eggs on medium flame. Do not brown the eggs. Put it on a plate and keep it aside.
  2. Secondly, add 2 tablespoons of olive oil and add garlic and onion, let it brown and then add all the vegetables, one can use frozen vegetables also. Add salt to taste and mix it well.
  3. Thirdly, add cooked rice along with one beaten egg on top of the rice. Let the rice cook for a minute then add Soya sauce and chili sauce and mix it well.
  4. Finally, add a scrambled egg and mix it well and garnish it with scallions. Serve it with a boiled egg.
