Lotus Cake Recipe

How does the cake look? Honestly saying I loved this delicious lotus cake recipe, quite easy to prepare. At times when I am just tired of drinking lotus shakes, I make this delicious biscoff lotus cake and have it as it is. So, this cake I prepared for my uncle at the request of my cousin sister and which turned out delicious and amazing. I know I have baked a lot of amounts of cake and I love to share it with you guys. As it’s my learning stage, you might not be satisfied with my decoration but I feel I am doing much better than before. A few years back I used to be scared of doing cake decoration because I always thought I will spoil the cake, but when getting over the cake decoration you will just enjoy it and just put all your ideas of decoration over the cake.

INGREDIENTS FOR LOTUS CAKE RECIPE

  1. 200gms All-Purpose Flour
  2. 200gms Butter
  3. 4 Eggs
  4. 200gms Brown Sugar
  5. 1 Teaspoon Baking Powder
  6. 1 Teaspoon Vanilla Extract

For The Buttercream

  1. 125gms Butter
  2. 150gms Biscoff Spread
  3. 250gms Powdered Sugar

For The Decoration

  1. Lotus Biscuits
  2. Biscoff Spread + Butter Cream

LOTUS CAKE RECIPE– PREPARATION METHOD

  1. Firstly, preheat the oven to 180 degrees. Then beat the butter and sugar together until smooth, light and fluffy.
  2. Secondly, strain the flour and baking powder in a bowl add the mixture to butter mixture and beat well. Then, slowly add in the eggs and keep beating until it becomes a thick and smooth batter. After adding the eggs add little of vanilla extract.
  3. Thirdly, line two tins with parchment paper and pour the equal batter.
  4. Finally, bake at 180 degrees for 30-35 minutes.

For The Buttercream

  1. Firstly, beat the butter until smooth, then add the powdered sugar, one spoon at a time and keep beating.
  2. Secondly, add the biscoff spread and beat it well.

For The Decoration

  1. Firstly, spread the buttercream on each layer and cover the whole cake with buttercream.
  2. Secondly, make the flowers using buttercream and a bit of food color (optional). Then add the crushed biscuits at the bottom.
  3. Finally, add some lotus biscuits on the top.

PREPARATION TIME- 20 minutes

BAKING TIME– 35 minutes

TOTAL TIME- 55 minutes
