Quiche Recipe

Quiche recipe is French shortcrust pastry consisting of savory custard such as spinach, cheese, chicken sausage, seafood, etc. Classic quiche is known as quiche Lorraine which is made of lardons and bacon. Quiche is served either cold or warm. This shortcrust pastry quiche is super crispy and easy to prepare. The best cheese for quiche is cheddar cheese and Swiss Gruyere cheese. This quiche has spinach, cheese, and chicken sausage filling which tastes yummy and delicious. If you haven’t tried quiche yet, you should. Because I can have quiche for breakfast, lunch, dinner, or anytime meal. You can make quiche for a big brunch or other casual get together. So make your favorite filling of quiche be it ham and cheese or bacon or spinach and cheese or any other filling you like. Let me know what’s your favorite filling….?


For the Quiche (Short Crust Pastry)

  1. 200gms Flour
  2. 100gms Butter
  3. A Pinch of Salt
  4. 2-3 Tablespoon Coldwater

For the Quiche (Filling)

  1. 75ml Milk
  2. 75ml Cream
  3. 2 Eggs
  4. Salt to taste
  5. Black Pepper to taste
  6. 30gms Cheese
  7. 10gms Butter
  8. 100gms Chicken Sausage
  9. 5gms Spinach


For the Quiche (Short Crust Pastry)

  1. Firstly, cut the chilled butter and then rub in the flour resembles breadcrumbs. Then, add the cold water and make the dough (do not over-knead the dough).
  2. Secondly, rest the pastry in the refrigerator for about 30 minutes. Then, roll out and blind bake at 100 degrees Celsius.

For the Quiche (Filling)

  1. Firstly, prepare the custard mix by adding milk, egg, cream, salt, and pepper and then strain it in a bowl.
  2. Secondly, sauté the sliced chicken sausages in butter along with spinach. To finish the quiche, arrange the sausages in the blind baked quiche, add the custard mixture. Then, mix grated cheese and bake at 180 degrees Celsius until golden and serve warm. 


BAKING TIME- 35 minutes

TOTAL TIME- 1 hour 5 minutes
